    A great lunch or dinner that has a wide range of flavors.  The chickpeas are rich in protein, soluble and insoluble fiber which helps keep you full and regulates blood sugar levels.  The kale is the ultimate superfood full of Vitamin A, C, K, and calcium.

    Prepare your tofu and soup

    Pre pare your tofu and soup according to the shared recipes.

    Prepare your kale

    Sauté chopped garlic and olive oil in a large skillet over medium heat. Add your roughly torn or chopped kale to the pan before the garlic starts to brown. Toss quickly with salt, pepper, and crushed red pepper. Wait until slightly wilted (about 1 minute) and remove from heat. Toss a little lemon juice and enjoy on the side of your tofu and soup!
