chopped, adjust to taste small green chilies or jalapenos

4 minced garlic cloves

1-1.5 inch piece grated fresh ginger

a handfull fresh basil leaves

1 Tbsp. dried oregano

1/8 cup extra virgin olive oil
Directions
This is a super easy, super healthy and delicious recipe that can be marinated a day ahead of your get together and just bake them in the oven next day. Put together in minutes. It makes for a great side for a BBQ or potluck party and even for your lunch or dinner!

Prepare potatoes and aromaticsCut the potatoes in half. Mix green chillies/ jalapeños, ginger & garlic together to make the fresh paste. You can blend or use a mortar and pestal for this. Now take a transparent 1-gallon bag, and add the olive oil to it and the salt. Then roughly tear basil leaves and add to the bag. Next, add the fresh chili-garlic-ginger paste to it and add your baby potatoes to the bag. Zip it closed and mix all the ingredients by hand such that each potato is coated with the mixture. Leave it for a few hours or overnight to marinate. |
