      METHOD

      In a wide bowl, mash potatoes and chickpeas coarsely.

      Add all the other ingredients and mix it well together.

      ASSEMBLY

      On a serving platter, lay down roughly torn 2-3 inch broad pieces of lettuce. Top with generous helpings of the filling and dress it up with lip smacking delicious Asian Ginger Dressing.
