Ingredients

Adjust Servings:
1lb. Green Beans chopped small
1lb. Frozen Green Peas
1/4th tsp Mustard seeds
1/4th tsp whole cumin seeds
1 tablespoon unsweetened coconut grated ( available as frozen food in Indian Grocery stores )
1 whole potato cubed
1 tblspn EVOO ( extra virgin olive oil )
2-3 small green chilies or jalapenos
1 heaping teaspoon Cumin-coriander powder
Salt to Taste
1 tsp turmeric powder
Half cup of water
1/2 cup chopped cilantro as garnish

METHOD
1. Heat a big wok or cast iron pan
2. Add oil to it
3. Once oil is heated, add mustard & cumin seeds to the oil
4. once they start crackling, add cubed potato, peas & green beans
5. Mix it all well together
6. Add salt, chilies, turmeric & cumin- coriander powder
7. Add 1/2 cup of water
8. Cover the wok with a plate halfways ( dont cover it fully )
9. Let vegetables cook on high heat for 1-2 mins only ( pls watch the wok closely or else veggies might get burnt at the bottom of the wok- pls ensure all water is used up)
10. Once veggies are softened and cooked, add the grated coconut. Mix well & garnish with chopped cilantro
11. Serve as is !!
