1 Block Extra Firm tofu cut into small cubes cut into small cubes
Spring Roll Skin
2 cups Sweet Bell peppers Any Color Choice
2 cups English Cucumber
half Cups Basil Leaves
half Cups Mint Leaves
half Cups Cilantro leaves
2 Cups Long Carrots
2 Limes
2 Cups Small Purple Cabbage chopped Lengthwise
2 Cups Rice Stick Noodles optional
Peanut Sauce Ingredients
Half Cups Organic Peanut Butter
2 tablsepoon sweet Soy Sauce Alternatively, mix 2 tablsepoon low sodium soya sauce with 2 tablsepoon honey
3 Cloves Cloves garlic
3 Green Chillies
3-4 kafir lime leaves
Juice of Half Lime
Fish Sauce Ingredients
6 tablespoon Fish Sauce strong odor alert !
4 Green Chillies Crushed
4 pods Garlic Crushed
3/4 Cups water
Half Fresh Squeeze Lime Juice
2 tablespoon Honey or Agave nectar Adjust to taste

      Say hello to summer fun with these super delicious Vietnamese Spring Rolls that pack a great punch of nutrients and yumminess all in one!!!

      Not only are they loaded with all the antioxidants and polyphenols, they are also protein & fiber rich !!!

      And guess what ? no frying in a coat of all purpose flour involved !!!

      and they come with two yummy dipping sauces …..

      Vietnamese Spring Rolls Recipe


      1. Take 2 cups of water in a wide pan and boil it.

      2. Chop all veggies, i.e carrots,cucumber, Bell peppers & cabbage lengthwise.

      3. Cut strips of tofu similar in length to veggies.

      4. Once the water starts boiling , shut off the gas.

      5. Take one Spring roll skin & completely immerse it in the water.

      6. Let it soak in water for 5 secs only and take it out using a pair of tongs.

      7. Then lay it flat on a working surface.

      8. similarly repeat with all the skins you need.

      9. You may spoil a few skins in the process. don't worry, its easy. you will get the hang of it once u do a couple.

      10. Now, to one end of the skin , add the noodles ( if using ) , on top of it layer all the veggies , mint, basil & cilantro leaves as shown in the video.

      11. Then start rolling it tucking in the sides of the skin as well to maintain a spring roll shape and that's it ! it is done . super easy , isn't it !!!

      12. Make the rest of your spring rolls similarly


      Peanut Sauce


      13. The easiest way to make this peanut sauce is to blend all ingredients in a blender. simple.

      14. The more traditional way is to blend the chilies,garlic and lime leaves in a mortar and pestle to achieve a slightly chunky consistency. You do you :


      Fish Sauce


      15. Mix all the above ingredients in a bowl and your fish sauce is ready.
