Ingredients

1 cup black lentils or urad dal Bengal gram dal - skinned
1 cup finely chopped onions
1 cup finely chopped tomatoes
1 Tbsp. ghee
1 Tbsp. turmeric powder
1 Tbsp. red chilli powder
1 Tbsp. ground coriander
1 Tbsp. cumin seeds
1 Tbsp. mustard seeds
3- 4 dry red chillies
1 cup water
3-4 curry leaves Optional
1 Tbsp. salt to taste
1 Tbsp. ground cumin

      Protein and fiber rich, full of B vitamins; this dish is great for a low carb diet.  A perfect bowl of urad dal on a cold December evening is just what the doctor ordered.  Cook time is 8 minutes

      Soak your urad dal

      Soak the urad dal for at least 4-5 hours

      Cook your ingredients in a Pressure Cooker

      In an instant pot, add the soaked urad dal, tomatoes, onions, and 1 cup of water. Turn the seal on. Set it on pressure cook for 8 mins.

      Add seasoning

      Once dal is cooked, add salt, cumin, coriander, turmeric, and half of your red chili powder and mix.

      Cook whole spices

      Time to prepare the tempering. In a small heated wok, add the ghee. After melted, add the mustard, cumin seeds, & dry red chilies. If you have curry leaves, add them at this point.
      Once the mustard seeds start to crackle, add the rest of the red chili powder. Turn off stovetop and carefully add the tempering to the dal. It will sizzle and release an amazing aroma of spices. Mix it all together. Ready to serve, enjoy!
