Ingredients

Adjust Servings:
1 head cauliflower chopped fine
1 bunch fenugreek leaves or 1 cup of frozen fenugreek leaves- optional (available in indian grocery stores- fresh & frozen)
1 cup frozen peas
2-3 Small Green Chillies or jalapenos chopped
1 tablespoon EVOO
1 tsp whole mustard seeds (optional)
1 tsp whole cumin seeds
1 heaping tsp Cumin-coriander powder
1 tsp turmeric powder
Salt to Taste
Half cup water
Half cup chopped cilantro as garnish

METHOD

1. Heat  oil in a large wok or cast iron pan
2. Once Oil is heated , add whole cumin seeds & mustard seeds
3. Once they crackle, add chillies, chopped cauliflower, fenugreek leaves & frozen peas
4. Add turmeric pwd, salt, cumin- coriander powder
5. Mix everything very well
6. Add water and cover wok halways with a plate, taking caution to see that veggies do not get burnt
7. Cook veggie son hig flame for 1-2 mins
8. Once softened and fully cooked, check salt for taste
12. Add cilantro as garnish and serve as is
