Prepare your onionsAdd chopped onions to a frying pan and cook until softened. Remove and set aside. |

Beat or whisk eggsBeat or whisk your eggs with 1 T. of water or milk. Add eggs to a greased frying pan (use olive oil or a little bit of butter). Spread out your egg mixture evenly across pan. Season with salt and pepper and add your chopped tomatoes, onions, jalapeños, and cilantro to one side of the omelette. Put a cover on your pan and cook until eggs no longer look runny. Flip bare side over to cover ingredients. Slide onto a plate and enjoy! |
