2 cups mixed dark leafy greens

Guacamole

2 ripe avocados
-
1/2 onion finely chopped

2-3 minced garlic cloves

1 lime lime juice

1/2 lemon lemon juice

1/2 - 1 chopped tomatoes

1 tsp. garlic powder
-
1/2 tsp. salt
-
2 Tbsp. chopped fresh cilantro

1 Tbsp. chopped small green chilies or jalapenosmore or less depending on desired heat level

Make your guacamoleMix all ingredients for the guacamole. Mash you avocados with a fork or mortar and pestle. |

Cook you veggiesBring a large skillet over medium heat with olive oil. Cook your onions and peppers together until softened. Add your beans and seasonings and bring to a low simmer. Remove from heat after a couple minutes. |

Plate your beans and veggiesEnjoy over your bed of greens with your guacamole. Season your greens with a squirt of fresh lemon juice. |
