Ingredients

Adjust Servings:
Salad
2 cups mixed dark leafy greens
1 cup diced tomatoes
1/2 cup kidney beans
1/4 chopped avocado
Veggie Burgers
1 can organic black beans
3 Tbsp. tomato paste
1/2 onion finely chopped
3 minced garlic cloves
1/2 tsp. garlic powder
1/2 tsp. smoked paprika
1/2 tsp. sea salt
1/2 tsp. ground black pepper
1/2 cup finely chopped mushrooms
2 Tbsp. whole wheat flour
Dressing
1 Tbsp. extra virgin olive oil
2 Tbsp. balsamic vinegar

These patties make a great summertime lunch that’s easy to bring to a bbq or to have on hand frozen whenever you need a healthy and filling lunch.  Top them on the salad for a hydrating, nutrient dense option.

Prepare your veggies

Prepare your veggies and roughly torn or chopped mixed greens in a large bowl.

Mix your burger mix

Bring all your burger ingredients into a food processor. Blend well but still allow the mixture to be slightly chunky. You'll want it solid enough to easily form patties without it being too runny. Brush with a little olive oil and grill or use a skillet and lightly brown on both sides. Enjoy over your salad with your olive oil, balsamic vinegar, and salt and pepper to taste. Enjoy!
