1 lb. ground chickenor ground turkey

1 - 15 oz. can diced tomatoes

4 garlic cloves

1 onion finely chopped

1 tsp. ground coriander

1 tsp. cumin powder or whole cumin

1 tsp. garam masala

1 tsp. chili powder

1 tsp. sea salt

2 steamed or baked sweet potato

2 Tbsp. avocado oil
Directions
A veggie and protein packed dish that can be used for a wide range of meals! Put grounds in a baked potato, over tacos, a grain bowl, or a salad.

Brown and season your chickenPreheat oven to 400° for the sweet potatoes. Bring a large skillet with avocado oil over medium heat. Add your onions and allow to glaze then your chopped garlic. Now add your ground chicken and chop with a spatula or wooden spoon and cook until browned and in small pieces. Add your diced tomatoes and stir. Add all your seasonings and lower your heat to a simmer. |

Prepare your potatoIf you are making your potatoes in the oven, peel and chop into cubes. Massage with olive oil and evenly lay out on a baking sheet. Bake for 25-30 minutes. If you are using the full potato, make a few small slices all over to release heat. Wrap in aluminum foil and place on cookie sheet or in a baking pan. When softened, slice lengthwise and lightly mash the inside. If making in the microwave, make slices and wrap in a paper towel. Enjoy your ground chicken in the potato or in a nice grain bowl with cubes. |
