Beat your eggsBeat or whisk your eggs with 1 T. of milk or water. |

Chop your veggiesDice your tomatoes and chop your spinach. Pop your bread in the toaster. Prep your non-stick frying pan with a bit of butter or Pam spray over medium heat. Add your egg mixture and evenly coat pan. Allow to cook for about a minute and then add your ingredients to one side and top the veggies with your feta cheese. Place a cover on your pan to cook the top side of your eggs. Flip your omelette over halfway to cover the side with ingredients when eggs no longer look runny. Place on your toast and enjoy open faced! Season with salt, pepper, and maybe some hot sauce! |
