1 head cauliflowerchopped finely

1 bunch fenugreek leavesor 1 cup of frozen fenugreek leaves- optional (available in Indian grocery stores)

1 cup frozen peas

2-3 small green chilies or jalapenoschopped

1 Tbsp. extra virgin olive oil

1 tsp. whole mustard seeds (optional)

1 tsp. whole cumin seeds

1 heaping tsp. ground cumin

1 tsp. turmeric powder

salt to taste

1/2 cup water

1/2 cup cilantro chopped

Heat Oil and add seedsHeat oil in a large wok or cast iron pan. Once oil is heated, add whole cumin and mustard seeds. |

Add your veggiesOnce the seeds begin to crackle, add your chillies, chopped cauliflower, fenugreek leaves, and frozen peas. |

Add spicesAdd turmeric powder, salt, cumin. Mix everything really well. |

Cover & cookAdd water and cover pan halfway with a lid or plate, taking caution to see that veggies don't get burnt. Cook veggies on high heat for 1-2 mins. |

Season to tasteOnce softened and fully cooked, check salt for taste. Add cilantro as garnish and serve as is. |
