Ingredients

Adjust Servings:
1 bunch baby bok choy
1 bunch Swiss chard
1.5-2 cups spinach leaves
1/2 cup plain greek yogurt
1 Tbsp. chickpea flour substitute with corn flour or all purpose flour
1 Tbsp. extra virgin olive oil
2-3 small green chilies or Jalapeno ( Please adjust to level of spice preferred )
2 inch fresh ginger
3 cloves garlic
1 tsp. ground turmeric
1 Tbsp. ground coriander
1 Tbsp. ground cumin
1 Tbsp. raw organic honey
salt to taste

      Bok choy & Swiss chard are nutritional powerhouses.  In this recipe we are combining these superfoods with the goodness of spinach.  Win Win!

      Prep your veggies

      Wash all greens thoroughly in water. Separate the stalks from the leaves of bok choy and swiss chard. You can keep the stalks aside to use later in salads or veg broth. Chop leaves roughly into small pieces.

      Blend aromatics

      Blend ginger, garlic & green chillies to a fine paste/puree in blender cup

      Sauté

      Take a big wok and turn the heat on. Add olive oil. Add the cumin and once it crackles, add ginger, garlic, and chili paste. Sauté it for a few seconds. Add all the greens to the wok. Mix it all together really well. Sauté greens for 1 min on high heat. Cover the wok . Turn the heat down to very low and let the greens cook under steam for 2 mins max. Now shut the gas off. Leave the wok with the lid on for 10 min.

      Blend and enjoy!

      While the greens steam, mix the yogurt with chickpea flour to form a smooth paste. After 10 mins, remove the lid from the wok. Greens should have wilted by now, mix them all together. Add turmeric, coriander, and cumin powder. Once cooled, blend all the greens to a smooth puree in a blender cup. Transfer the blended puree to the same wok. Add the yogurt mix and salt to taste. Mix everything really well

      Enjoy!

      Serving:
      Serve with toasted Healthy Bread (recipe share already) or with a bowl of quinoa or rice
