1 bunch baby bok choy

1 bunch Swiss chard

1.5-2 cups spinach leaves

1/2 cup plain greek yogurt

1 Tbsp. chickpea floursubstitute with corn flour or all purpose flour

1 Tbsp. extra virgin olive oil

2-3 small green chiliesor Jalapeno ( Please adjust to level of spice preferred )

2 inch fresh ginger
-
3 cloves garlic
-
1 tsp. ground turmeric
-
1 Tbsp. ground coriander
-
1 Tbsp. ground cumin
-
1 Tbsp. raw organic honey
-
salt to taste

Blend aromaticsBlend ginger, garlic & green chillies to a fine paste/puree in blender cup |

SautéTake a big wok and turn the heat on. Add olive oil. Add the cumin and once it crackles, add ginger, garlic, and chili paste. Sauté it for a few seconds. Add all the greens to the wok. Mix it all together really well. Sauté greens for 1 min on high heat. Cover the wok . Turn the heat down to very low and let the greens cook under steam for 2 mins max. Now shut the gas off. Leave the wok with the lid on for 10 min. |

Blend and enjoy!While the greens steam, mix the yogurt with chickpea flour to form a smooth paste. After 10 mins, remove the lid from the wok. Greens should have wilted by now, mix them all together. Add turmeric, coriander, and cumin powder. Once cooled, blend all the greens to a smooth puree in a blender cup. Transfer the blended puree to the same wok. Add the yogurt mix and salt to taste.
