Ingredients

Quinoa
2 fresh squeezed lime juice 1 whole, plus 2 Tbsp.
1 cup cilantro chopped
1 Tbsp. ground cumin
salt to taste
Salsa
1 Tbsp extra virgin olive oil
14oz. can organic black beans
1 mango chopped ripe, peeled & diced
1 small green chilies or jalapenos finely chopped

Mix quinoa with ingredients

In a bowl take fluffed and cooled quinoa and add cilantro, cumin powder, lime juice & salt. Mix and set aside.

Combine other ingredients

In a big salad bowl, combine the chopped red onion, lime juice, olive oil, and season with salt, to taste. Mix well and then combine with the remaining ingredients.

Refrigerate until ready to serve.

Serve salsa along with quinoa & enjoy.
